How do I calculate the energy of an impact

The energy in Nm or Joule = mass * gravity * height, the formula is: Ep = m * g * h. For example: using a weight of 1Kg dropped from 0.25m height will result in an impact of 1Kg * 10m/s² * 0.25 m = 2.5 Nm.
